- Quinoa Salad with Pomegranates This turned out to be super yummy!
- Spinach Salad
- Mushroom Salad This was my least favorite of all.
- Beetroot Salad The beetroots turned out to be bitter. I replaced them with feta cheese and olives.
- Mango Salad with Green Peppers I forgot to bring my lunch bag to work, instead I ended up having Greek Chicken Salad from Kojax.
Also as a general note, I guess I was missing enough protein in the salads. Everyday, I ended up being hungry at around 3:30 to 4. I try to add more protein to this week Salads.
- Green Salad with Dried Figs and Nuts (adding pine nuts)
- Chopped Greek Salad with Chicken
- Blueberry Walnut Salad (adding chicken breast)
- Zee`s Eggplant Salad
- Quinoa Salad with Dried Cranberries and Apricots
