I can't say last week was a total success, but I made it through. Here is what happened:
Green Salad with Dried Figs and NutsI needed to do my taxes (yup, it is that time of the year), so my lunch hour was spent at the accontants office. I ended up having granola and soy milk for lunch. To keep up with a salad every day, I added a melon salad from Cafe Depot.- Chopped Greek Salad with Chicken I did not have time to prepare the ingredients so I got one from Kojax again.
- Blueberry Walnut Salad (with chicken thigh)
Zee`s Eggplant SaladReplaced with green blueberry salad. A mixture of greens with blueberry and feta cheese.- Quinoa Salad with Dried Cranberries and Apricots (with chicken thigh) Replaced the dried cranberries and apricots with raspberries. It was my favorite dish of the week.
Last week I saw one of my colleagues having wild rice. I had never seen it before, I tasted it and it seemed good to me. I got some this week and one of the salads for next week is going to be wild rice based. We will see.
Here is the plan for the next week:
It is a four day plan because it is Persian new year on Wednesday, and I am going to my friend's place on Tuesday night. Knowing myself, I would be super lazy to prepare something for the day after. So I decided to go with four salads this week.
